Why this pairing works

Blueberries have a jammy, slightly tart flavor that softens lavender's herbal edge. The Blueberry Lavender Simple Syrup doubles down on both, so the compote tastes like it cooked all morning.

  1. Heat your waffle iron. Prepare the batter according to the package directions.
  2. In a small saucepan, simmer the blueberries, simple syrup and lemon juice over medium heat until the berries burst and the sauce thickens slightly, 5 to 7 minutes.
  3. Cook the waffles until deep golden. While each one is still hot, sprinkle it with a pinch of Lavender Sugar so it melts into a thin, crackly layer.
  4. Spoon the warm compote over the waffles and serve right away.

Make it your own

  • Leftover compote is excellent stirred into yogurt or spooned over vanilla ice cream.
  • Use Classic mix and top with sliced peaches in August.
