Lemon Lavender Scones with Honey Glaze

Bright lemon, a whisper of lavender and a honey glaze that sets into a thin shell. These are the scones we bake when friends are coming over and we want the kitchen to smell like we tried very hard (we didn't).

Why this pairing works
Lemon is lavender's best friend in the kitchen. Its acidity lifts the floral notes so they taste fresh instead of perfumey, and honey rounds it all out.

Ingredients
- 1 bag Lavender Scone Mix (Lemon), plus the ingredients listed on the package
- 1 Tbsp Lavender Sugar, for the tops
- 1 cup powdered sugar
- 1 Tbsp Lavender Wildflower Honey
- 1 to 2 Tbsp fresh lemon juice
- 1 tsp lemon zest, optional
Directions
- Prepare and shape the scone dough according to the package directions. Keep the butter and dough as cold as you can.
- Brush the tops with a little milk or cream and sprinkle with Lavender Sugar.
- Chill the shaped scones for 15 minutes, then bake as directed until golden at the edges.
- Whisk the powdered sugar, honey and 1 Tbsp lemon juice. Add more juice a few drops at a time until the glaze drizzles slowly.
- Cool the scones 10 minutes, drizzle with glaze and finish with lemon zest.
That 15-minute chill is the secret to tall, flaky scones. Cold butter makes steam pockets in the oven. Honey isn't safe for babies under 1 year old.
