Blueberry Lavender Waffles with Quick Blueberry Compote

Michigan blueberry season is short, sweet and worth planning breakfast around. These crisp waffles get a five-minute compote spooned over the top and a crackly lavender sugar finish.

Why this pairing works
Blueberries have a jammy, slightly tart flavor that softens lavender's herbal edge. The Blueberry Lavender Simple Syrup doubles down on both, so the compote tastes like it cooked all morning.

Ingredients
- 1 bag Lavender Pancake & Waffle Mix (Blueberry), plus the ingredients listed on the package
- 1 1/2 cups fresh or frozen blueberries
- 3 Tbsp Lavender Simple Syrup (Blueberry)
- 1 tsp lemon juice
- 1 Tbsp Lavender Sugar, for sprinkling
Directions
- Heat your waffle iron. Prepare the batter according to the package directions.
- In a small saucepan, simmer the blueberries, simple syrup and lemon juice over medium heat until the berries burst and the sauce thickens slightly, 5 to 7 minutes.
- Cook the waffles until deep golden. While each one is still hot, sprinkle it with a pinch of Lavender Sugar so it melts into a thin, crackly layer.
- Spoon the warm compote over the waffles and serve right away.
Hold finished waffles on a wire rack in a 200°F oven, not on a plate. They stay crisp instead of steaming.
Make it your own
- Leftover compote is excellent stirred into yogurt or spooned over vanilla ice cream.
- Use Classic mix and top with sliced peaches in August.
