Why this pairing works

Frothed milk softens lavender tea into something mellow and creamy, while vanilla adds warmth. It is a gentle introduction for anyone who thinks lavender only belongs in soap.

  1. Steep the tea in the hot water for 5 minutes, then strain into a large mug.
  2. Stir in the simple syrup.
  3. Heat the milk until steaming (do not boil), then froth it with a frother or by shaking it in a lidded jar.
  4. Pour the milk over the tea, holding back the foam with a spoon, then spoon the foam on top.
  5. Snip the honey stick and stir it in.

Make it your own

  • Iced: steep double-strength tea, cool it and pour over ice with cold milk.
  • Add a pinch of cinnamon on top in December.
