Pumpkin Lavender Bread Pudding with Maple Butter Sauce

Any pumpkin bread left over after Thanksgiving weekend deserves this. Cubes of Pumpkin Lavender Bread soak in a vanilla custard, bake until puffed and golden, then get a warm maple butter sauce poured over the top.

Why this pairing works
Pumpkin bread already has the spices and lavender baked in, so the custard only needs vanilla and a little Lavender Sugar. Maple sauce adds a buttery finish that tastes like the holidays.

Ingredients
- 1 loaf Lavender Bread Mix (Pumpkin), baked per package directions, a day or two ahead
- 4 eggs
- 2 cups milk
- 1/2 cup heavy cream
- 1/4 cup Lavender Sugar, plus 1 Tbsp for the top
- 1 tsp vanilla extract
- 1/2 cup Lavender Maple Syrup, for the sauce
- 3 Tbsp butter, for the sauce
- 1 pinch salt
Directions
- Cut the bread into 1-inch cubes and spread on a sheet pan. Toast at 325°F for 10 minutes so they hold their shape. Butter an 8x8-inch baking dish.
- Whisk the eggs, milk, cream, 1/4 cup Lavender Sugar and vanilla in a large bowl. Add the bread cubes, press them down and soak 30 minutes.
- Pour into the dish, sprinkle with 1 Tbsp Lavender Sugar and bake at 350°F for 40 to 45 minutes, until puffed, golden and the center reads 160°F.
- For the sauce, simmer the maple syrup, butter and salt in a small pan for 2 minutes, stirring.
- Cool the pudding 10 minutes. Serve warm with the maple sauce spooned over.
Slightly stale bread soaks up custard without turning mushy. If your loaf is fresh, the quick toast in step 1 does the same job.
