Why this pairing works
Pumpkin adds moisture and color while the spices do the heavy lifting on flavor. Sweetening the cream with lavender syrup instead of sugar spreads the floral note evenly, and a drizzle on top ties it together.
Serves 4 Prep 10 min Cook 20 min
Ingredients
- 1 bag Lavender Pancake & Waffle Mix (Classic), plus the ingredients listed on the package
- 1/2 cup canned pumpkin puree, not pumpkin pie filling
- 1 1/2 tsp pumpkin pie spice
- 3/4 cup heavy cream, cold
- 3 Tbsp Lavender Simple Syrup (Classic), divided
- 2 Tbsp toasted pepitas, optional
Directions
- Heat your waffle iron. Prepare the batter according to the package directions, then whisk in the pumpkin and pumpkin pie spice. Let it rest 5 minutes.
- Whip the cream with 2 Tbsp Lavender Simple Syrup to soft peaks.
- Cook the waffles until deep golden and crisp. Pumpkin batter may need a minute longer than usual.
- Top each waffle with whipped cream, a drizzle of the remaining syrup and a sprinkle of pepitas.
Freeze the other half of the pumpkin can in a zip-top bag, pressed flat. It thaws in 20 minutes on the counter for the next batch.
Serve it with: Lavender Ground Coffee (Pumpkin Spice)
Make it your own
