Red, White and Blue No-Bake Lavender Cheesecake Jars

A Fourth of July dessert that stays cool while the oven stays off. Creamy lavender cheesecake, crunchy blueberry muffin cookie crumbs and a pile of cherries and blueberries, all packed into jars that travel to the fireworks.

Why this pairing works
Whipped cream folded into cream cheese makes a light, mousse-like filling that sets in the fridge with no baking. A tiny bit of lavender extract makes the berries taste even fresher.

Ingredients
- 6 Lavender Cookie (Blueberry Muffin), crushed into crumbs
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/8 tsp Lavender Extract, or to taste
- 1 tsp lemon juice
- 1 cup heavy cream, cold
- 1 cup sweet cherries, pitted and halved
- 1 cup fresh blueberries
- 1 Tbsp Lavender Sugar, for the fruit
Directions
- Beat the cream cheese until completely smooth, then beat in the powdered sugar, lavender extract and lemon juice.
- In another bowl, whip the cream to stiff peaks. Fold it into the cream cheese mixture in 2 additions.
- Toss the cherries and blueberries with the Lavender Sugar.
- Layer cookie crumbs, cheesecake filling and fruit in 6 small jars, then repeat. Finish with fruit on top.
- Cover and chill at least 2 hours. Keep in a cooler for the trip.
Lavender extract is potent. Start with 1/8 teaspoon and taste. A drop too much tastes soapy.
Make it your own
- Swap the cookie crumbs for crushed Lavender Shortbread Cookies.
- Use strawberries or raspberries in place of cherries.
