Homemade Honey Lavender Marshmallows

Store-bought marshmallows can't compete. These are pillowy, lightly floral and sweetened with honey, and they melt into a mug of lavender hot chocolate in the prettiest way. Stack them in a jar with a ribbon for a sweet neighbor gift.

Why this pairing works

Honey adds a soft floral sweetness and keeps the marshmallows tender. A drop of lavender extract echoes the honey, so they taste like a summer afternoon in the middle of winter.

Ingredients

  1. Grease an 8x8-inch pan and dust it well with the powdered sugar mixture. In the bowl of a stand mixer, sprinkle the gelatin over 1/2 cup cold water and let it bloom.
  2. In a large saucepan, stir the sugar, honey, salt and remaining 1/2 cup water over medium heat until the sugar dissolves. Boil without stirring until a candy thermometer reads 240°F, 8 to 10 minutes. Honey foams up, so use a big pan.
  3. With the mixer on low, carefully pour the hot syrup down the side of the bowl. Raise to high and whip 10 to 12 minutes, until thick, white and glossy.
  4. Beat in the lavender and vanilla extracts. Taste, then add another drop of lavender if you like.
  5. Scrape into the pan, smooth the top and dust with more powdered sugar mixture. Let set uncovered at least 4 hours or overnight.
  6. Cut into squares with an oiled knife and toss each one in the dusting mixture.

Make it your own

  • Roll the cut marshmallows in Lavender Sugar instead of the powdered sugar mix.
  • Cut with small oiled cookie cutters for stars and hearts.
