Honey Lavender Glazed Easter Ham

Easter dinner deserves a centerpiece that shines, literally. A spiral ham gets a sticky honey, orange and Dijon glaze with a pinch of lavender, and it bakes up glossy while you finish the sides.

Why this pairing works
Ham is salty and smoky, so it loves something sweet and bright. Honey and orange bring the sweetness, Dijon adds a gentle bite and a little lavender gives the glaze a floral, springtime finish.

Ingredients
- 1 fully cooked bone-in spiral ham, 8 to 10 lb
- 1/2 cup water, for the pan
- 1/2 cup Lavender Wildflower Honey
- 1/4 cup orange juice, plus 1 tsp zest
- 2 Tbsp Dijon mustard
- 1/2 tsp Culinary Lavender Buds, finely crushed
- Lavender Pepper Grinder, a few twists
Directions
- Heat the oven to 325°F. Set the ham cut side down in a roasting pan, add the water and cover tightly with foil.
- Bake about 12 minutes per pound, until a thermometer in the center (away from the bone) reads 130°F.
- Meanwhile, simmer the honey, orange juice and zest, Dijon, crushed lavender and pepper in a small saucepan for 3 minutes, until slightly thickened.
- Uncover the ham and raise the oven to 400°F. Brush half the glaze over the top and between the slices. Bake 10 minutes.
- Brush with the remaining glaze and bake 5 to 10 minutes more, until bubbly and the center reads 145°F. Rest 15 minutes before serving.
Keep the foil on until it's time to glaze. It traps steam so the thin spiral slices stay juicy. A little lavender goes a long way here; more than 1/2 tsp can taste soapy. Honey isn't safe for babies under 1 year old.
