Maple Apple Lavender Shortbread Tart

Thin apple slices fanned in circles over a press-in lavender shortbread crust, brushed with maple and baked until the edges curl and caramelize. It looks like it came from a French bakery, but the crust needs no rolling pin at all.

Why this pairing works
Shortbread makes a crisp, buttery tart shell when you press it in and bake it partway first. Maple glaze gives the apples a shiny finish, and a small pinch of crushed lavender in the apples echoes the floral note in the crust.
Serves 8 Prep 25 min Cook 50 min
Ingredients
- 1 bag Lavender Cookie Mix (Shortbread), plus the ingredients listed on the package
- 3 crisp apples, such as Honeycrisp or Jonagold, cored and very thinly sliced
- 1 Tbsp lemon juice
- 1/4 cup Lavender Maple Syrup, divided
- 2 Tbsp butter, melted
- 1/2 tsp ground cinnamon
- 1/4 tsp Culinary Lavender Buds, crushed
- Lightly sweetened whipped cream, for serving
Directions
- Heat the oven to 350°F. Prepare the shortbread dough according to the package directions and press it evenly over the bottom and up the sides of a 9-inch tart pan with a removable bottom. Chill 15 minutes.
- Bake the crust 15 to 18 minutes, until the edges are light golden. Raise the oven to 375°F.
- Toss the apple slices with the lemon juice, 2 Tbsp maple syrup, melted butter, cinnamon and crushed lavender.
- Fan the slices in overlapping circles over the warm crust, working from the outside in. Set the pan on a sheet pan and bake 30 to 35 minutes, until the apples are tender when pierced and their edges are golden.
- Warm the remaining 2 Tbsp maple syrup and brush it over the hot apples. Cool at least 30 minutes, then remove the ring, slice and serve with whipped cream.
Slice the apples about 1/8 inch thick with a mandoline or a sharp knife. Thin slices bend into neat circles and cook through before the crust gets too dark.
Serve it with: Lavender Drink Bombs (Spiced Chai Latte)
Make it your own
- Swap half the apples for thinly sliced firm pears.
- Serve with warm mugs of Spiced Chai Latte drink bombs melted in hot milk.
