Maple Lavender Glazed Salmon

A 25-minute weeknight dinner that tastes like you planned ahead. A sticky maple glaze with a pinch of lavender caramelizes on salmon in the oven while you toss a salad.

Why this pairing works
Salmon's richness loves something sweet and something salty. Maple and soy cover both, and a tiny amount of lavender adds an herbal lift, the way rosemary would.

Ingredients
- 4 salmon fillets, about 6 oz each
- 3 Tbsp Lavender Maple Syrup
- 1 Tbsp soy sauce or tamari
- 1 tsp Dijon mustard
- 1/4 tsp Culinary Lavender Buds, finely crushed
- Lavender Salt Grinder, to taste
- Lavender Pepper Grinder, to taste
Directions
- Heat the oven to 400°F and line a sheet pan with parchment.
- Crush the lavender buds between your fingers or with a mortar and pestle. Whisk with the maple syrup, soy sauce and Dijon.
- Season the salmon with Lavender Salt and Pepper, then brush with half the glaze.
- Bake 12 to 15 minutes, until the salmon flakes easily and reads 145°F. Brush with the remaining glaze in the last 3 minutes.
With culinary lavender, less is more. 1/4 teaspoon is plenty for four servings. Too much tastes soapy.
Make it your own
- Works beautifully on chicken thighs (bake to 165°F).
