Watermelon Feta Bites with Honey Lime Drizzle

Cold, crunchy, salty and sweet. These little picks of watermelon, feta and mint disappear at every summer party, and they take about 15 minutes to make.

Why this pairing works
Salty feta makes watermelon taste even sweeter, and cracked black pepper adds a surprising bit of heat. Watermelon honey in the lime drizzle ties it all together.

Ingredients
- 4 cups seedless watermelon, cut into 1-inch cubes, chilled
- 6 oz block feta, cut into 1/2-inch cubes
- 24 small fresh mint leaves
- 24 Lavender Cocktail Picks
- 3 Lavender Honey Sticks (Watermelon), about 1 Tbsp honey
- 1 Tbsp fresh lime juice
- 1 Tbsp olive oil
- Lavender Pepper Grinder, cracked, to taste
Directions
- Snip the honey sticks into a small bowl. Whisk in the lime juice and olive oil.
- Top each watermelon cube with a mint leaf and a cube of feta, then spear with a cocktail pick.
- Arrange on a chilled platter. Right before serving, drizzle with the honey lime mixture and finish with cracked pepper.
Build the bites up to an hour ahead and keep them cold, but add the drizzle at the last minute. Salt and acid pull juice out of the watermelon quickly. Honey isn't safe for babies under 1 year old.
Make it your own
- Swap the feta for small fresh mozzarella balls.
- Add a thin slice of cucumber for extra crunch.
