About ink! Coffee (Bonnie Brae)

ink! Coffee is a Colorado roaster that began in Aspen under founder Keith Herbert and now roasts in Denver's RiNo neighborhood. Beans are roasted by hand in small batches, and the company says Denver's altitude lets it roast more slowly. Its Black and Tan blend pairs a European-style dark roast with a milder Central American coffee.

Of its Denver locations, the Bonnie Brae shop on South University Boulevard is the one built for sitting down. It has indoor seating, a large outdoor patio, a room that shows work by local artists, and a nitro tap for cold coffee. The other spots are a kiosk at Cherry Creek Shopping Center, a lobby shop at 1801 California Street downtown, and a kiosk inside National Jewish Health.

Bonnie Brae opens at 6 a.m. on weekdays and 7 a.m. on weekends and closes at 3 p.m. every day, so it suits an early start. Bags of whole-bean coffee make an easy gift from a Denver trip. The roaster also makes a blend for National Jewish Health, with part of its sales going to the hospital's Morgridge Academy school.

Pollywog Station Lavender Farm in Parker is about 17 miles southeast, roughly 35 to 40 minutes by car. Grab coffee here on the way out of the city, and check the farm's website for you-pick days and hours first.
