Victoria is a classic, heavy-yielding rhubarb with huge leaves and thick green stalks that blush red toward the base. It is handsome enough to grow in an ornamental bed as well as the vegetable garden.
The tart stalks are perfect for pies, sauces and jams, and they can be canned or frozen. Plants begin producing well in their second season and keep coming back for years with very little care. Eat only the stalks; the leaves are not edible.
What it looks like
Huge, broad, heart-shaped to rounded leaves 12 to 18 inches across are deep green and slightly crinkled with prominent veins. They are held on thick, celery-like stalks 1 to 2 inches wide that are green along most of their length and flushed red toward the base. The plant forms a large, rounded mound 2 to 3 feet tall and about 3 feet wide. In late spring, tall, thick stalks may rise above the leaves with plumes of tiny creamy white flowers.
Growing it with lavender
Rhubarb wants richer, more fertile soil than lavender, so plant it in the vegetable or kitchen garden rather than in the lean lavender beds.
Care
Plant in full sun in rich, well-drained soil with plenty of compost, setting the crown just at or slightly below soil level. Hardy in zones 3 to 9. Harvest lightly in the second year and more fully after that by pulling stalks, and remove flower stalks as they appear to keep the plant producing.

Dormant bare-root plant, sold in boxes of 25 per variety (order in multiples of 25). Bare-root plants ship or are picked up March 1–May 31 only. They are soil-free, so they may ship to every state in that window. Dormant plants often show little or no top growth on arrival; plant or heel them in promptly.
