Why this pairing works
Apples and blueberries meet right at the turn of the season, and together they taste like late summer sliding into fall. A thick streusel adds buttery crunch to the soft cake.
Serves 9 Prep 20 min Cook 40 min
Ingredients
- 1 bag Lavender Muffin Mix (Blueberry), plus the ingredients listed on the package
- 1 cup diced apple
- 1/2 cup all-purpose flour, for the streusel
- 1/3 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp Culinary Lavender Buds, crushed
- 4 Tbsp cold butter, cubed
Directions
- Heat the oven to 350°F. Grease a 9x9 pan.
- Rub the flour, brown sugar, cinnamon, crushed lavender and butter together with your fingers until it forms clumps. Chill while you make the batter.
- Prepare the muffin batter according to the package directions and fold in the apple. Spread it in the pan.
- Scatter the streusel evenly over the top.
- Bake 35 to 45 minutes, until a toothpick in the center comes out clean or with a few moist crumbs. Cool at least 20 minutes before cutting.
Squeeze some of the streusel into bigger clumps before scattering it. Big crumbs stay crunchy while small ones melt into the cake.
Serve it with: Lavender Ground Coffee (Blueberry)
