About JUSTIN Vineyards & Winery
JUSTIN is a Paso Robles winery that focuses on Bordeaux-style grapes, and its best-known wine is the ISOSCELES red blend. The estate on Chimney Rock Road sits among rolling vineyard hills west of town and includes the tasting room, wine caves, a restaurant and the JUST Inn.
The estate tasting room is open every day from 11 a.m. to 5 p.m. Beyond a standard guided tasting of current releases, the winery runs a long menu of experiences: an hour-long cave tour that ends with a barrel taste of the newest ISOSCELES, a library flight where you pick five older vintages, a 90-minute blind tasting session, a small-group vineyard tour with a premium flight, an edible-garden walk with tea or herb-salt blending, and a three-hour chocolate-making class. Walk-ins are welcome, but reservations are recommended, especially on weekends, and parties are capped at 10.
Outside food is not allowed, but the Restaurant at JUSTIN serves an à la carte lunch from Thursday through Monday, 11 a.m. to 2:30 p.m., using produce from the estate's 26-acre farmstead, and a multicourse dinner Thursday through Sunday evenings. For a stay, the JUST Inn takes reservations through its concierge. In town, a downtown tasting room is open daily with later hours on Fridays and Saturdays.
Central Coast Lavender, an organic lavender estate near town that steam-distills its own oils, is about a 30-minute drive back toward Paso Robles from the JUSTIN estate.
