Overview
Chaff, stem bits and broken buds fall through the screen, so only about 8 of every 10 buds come out as culinary-grade lavender. Each tap sifts up to 60 buds; you need at least 5.
For example, sifting 60 buds gives 48 culinary lavender.
Why it matters
- Every farm-kitchen recipe starts with culinary lavender.
- It is the second way to get culinary lavender. The first is harvesting a plot as a Culinary lot in the field (only for cultivars rated 3★ or better for culinary use).
- The kitchen even suggests it: when you are short, it says you can sift buds at the debudding bench.
Tips
- Sifting is instant, so you can sift right before you cook.
- Keep some buds unsifted if you also make sachets or potpourri.
