Lavender Shortbread Sandwich Cookies with Honey Buttercream

Buttery lavender shortbread, a swoop of honey buttercream and a sparkly sugar edge. They look like they came from a French bakery, and they're perfect for showers, cookie trays and tea parties.

Why this pairing works
Shortbread is mostly butter, and butter carries lavender flavor beautifully. A drop of lavender extract in the filling ties the cookie and cream together.

Ingredients
- 1 bag Lavender Cookie Mix (Shortbread), plus the ingredients listed on the package
- 1/2 cup butter, softened, for the filling
- 1 1/2 cups powdered sugar
- 1 Tbsp Lavender Wildflower Honey
- 1/8 tsp Lavender Extract, or to taste
- 2 Tbsp Lavender Sugar, for rolling
Directions
- Prepare the shortbread dough according to the package directions. Roll 1/4 inch thick and cut into small rounds.
- Bake as directed until the edges are just golden. Cool completely.
- Beat the butter, powdered sugar, honey and lavender extract until fluffy, about 3 minutes.
- Pipe or spread a spoonful of buttercream on half the cookies and top with the rest.
- Roll the exposed buttercream edges in Lavender Sugar.
Lavender extract is concentrated. Start with 1/8 teaspoon, taste, then add a drop more if you like. Honey isn't safe for babies under 1 year old.
Make it your own
- Tint the buttercream pale purple with a drop of gel food coloring.
- Add lemon zest to the buttercream.
