Lemon Poppy Seed Lavender Muffins with Honey Butter

Tall muffins with a crunchy lavender sugar top, split open while they're warm and slathered with honey butter. They are good for brunch and even better for a Monday.

Why this pairing works
The coarse lavender sugar crust gives every bite a little crunch and a burst of flavor, while honey butter adds richness to the bright lemon.

Ingredients
- 1 bag Lavender Muffin Mix (Lemon Poppy Seed), plus the ingredients listed on the package
- 2 Tbsp Lavender Sugar, for the tops
- 4 Tbsp butter, softened
- 1 Tbsp Lavender Wildflower Honey
Directions
- Prepare the batter according to the package directions. Don't overmix; a few lumps are fine.
- Fill the muffin cups nearly to the top and sprinkle each with Lavender Sugar.
- Bake as directed until a toothpick comes out clean.
- Mash the butter and honey together and serve with the warm muffins.
For bakery-style domes, bake the first 5 minutes at 425°F, then lower to the package temperature. Honey isn't safe for babies under 1 year old.
