About Castoro Cellars

Castoro Cellars began in 1983, when Niels and Bimmer Udsen made a few barrels of wine for friends and family in a rented corner of someone else's winery. They describe their path as backwards: they sold wine first, then bought equipment, a winery and a tasting room, and only after that started planting vineyards. Today the estate vineyards cover more than 1,400 acres, all certified organic and certified sustainable, and the winery calls itself the largest grower of certified organic grapes in California. The beaver on the labels and the 1-888-DAM-FINE phone number are part of the winery's playful style.

The tasting room sits in the middle of the Cobble Creek Estate Vineyard on North Bethel Road in Templeton, just south of Paso Robles. It is open daily from 10 a.m. to 5:30 p.m. and closes only on Thanksgiving, Christmas and New Year's Day. A tasting of five wines is $20 in 2026, and you can reserve ahead or simply walk up. The shop pours new releases, single-vineyard wines and library wines, and sells local artisan goods and packaged gourmet foods.

The winery promotes the vineyard setting as a place to picnic, and it also has a disc golf course, yoga classes and a calendar of events. For an overnight, the winery rents a vacation home called THE HIVE and points visitors to local hotels and inns.

Central Coast Lavender, an organic lavender estate near Paso Robles that steam-distills its own oils, is about a 15-minute drive north, so a morning among the lavender and an afternoon tasting at Castoro make an easy pairing.
