About Distillerie Fils du Roy

Distillerie Fils du Roy began as an idea at a family reunion in Caraquet in 2011. The next year Sébastien Roy and his mother, Diane Roy, opened the distillery in Petit-Paquetville, a small village in the middle of the Acadian Peninsula. The family later built a malting plant, now run as the Proud Maritime Malthouse, which supplies base malt to brewers and distillers across the province, so the operation reaches back to the grain itself.

The best-known bottles are Gin Thuya and Absinthe La Courailleuse. The shop also lists whisky, vodka, rum and brandy, a liqueur, beer and ready-made cocktails, along with coffee and honey. Visits and tastings are free, and the distillery asks guests to arrive at least an hour before closing so there is time to see the equipment and taste properly.

The doors are open Monday to Saturday from 10 a.m. to 5 p.m., with extra Friday evening hours from 5 to 8 p.m. that the team describes as a relaxed time to drop in. Groups and private events are arranged by contacting the distillery directly. The family runs a sister distillery in Saint-Arsène, Quebec, under a different brand, so make sure you are heading to the New Brunswick address.

Lavande d'Acadie in Inkerman is about 20 minutes east toward the coast, which makes the two an easy Acadian Peninsula pairing: walk the lavender field and its forest trail in the morning, then end with the distillery visit before the 4 p.m. cutoff for tastings.
