About Origines Cuisine Maritime

Chef Benjamin Cormier came home to the Acadian Peninsula after years in fine-dining kitchens and opened Origines Cuisine Maritime in Caraquet in 2018. The idea is simple: a tasting menu built around what the region's waters and farms produce, changing with the seasons and the tides, with local seafood in the spotlight through the summer.

Dinner is served Thursday, Friday and Saturday from 5 p.m. The base menu is three courses, and you can add appetizers to make it four or five. Menus change often, with the latest posted on their website and social pages; the fall menu ran October 15 to 31 in 2026. Provincial tourism writers note sommelier-chosen wine pairings, and some regulars drive hours each way for the meal.

Reservations are taken by phone at 506-727-2717; if no one answers, leave a message and the restaurant will call back. A semi-private room can be rented on open days, and the restaurant also hosts private events.

Lavande d'Acadie near Inkerman, about 25 minutes south, is free to enter and offers paid lavender picking, with full bloom in July. Spend the afternoon in the field, then drive north for dinner here.

What to do

  • Book a three-course tasting menu of regional seafood
  • Add appetizers to stretch it to four or five courses
  • Ask about wine pairings
