About Wilton Cheese Factory
The Wilton Cheese Factory has been making cheese on Simmons Road since 1867, when it began as a farmers' cooperative. The Jensen family bought it in the 1970s on the condition that it keep the Wilton name, and it still runs under that name today, with Scott Jensen as owner and manager.
Cheddar is made the traditional way: milk is set with natural color and enzyme, cut, heated and stirred, drained, then turned and piled in the cheddaring steps, milled, salted and pressed into 40-pound blocks before aging. The factory store sells the results, from marble and Colby to brick cheeses flavored with hot pepper, with onion and garlic, or with olives. Fresh curd is sold on set days of the week, so ask which days it comes in.
The store is open every day from 9 to 5 all year, closing only on Christmas Day, Boxing Day and New Year's Day, which makes it one of the most dependable stops in the area for picking up cheese for a picnic or the drive home.
Lavender Queen Lavender Farm in Yarker is about 10 minutes north on country roads, so cheese and lavender pair well on a summer afternoon west of Kingston.
