About Waseda Farms
Waseda Farms raises its animals on pasture in Door County and sells the meat from a farm market on Logerquist Road in Baileys Harbor. The Door County land covers about 1,000 acres of pasture and hay ground, where beef cattle, pigs and laying hens live outdoors year-round. The farm splits its land into more than 100 paddocks and moves the cattle every day or two, then rests each pasture for one to four months.
The Lutsey family built Waseda over about 15 years. Jeff Shefchik, who grew up showing animals at the county fair near Luxemburg and later ran a trucking company, bought the farm with his wife Lisa after starting a cattle ranch in Missouri. The family lives in the Green Bay area and splits time between the two farms.
The Baileys Harbor market is the place to stock a cooler: grass-fed beef steaks, roasts and ground beef, pork chops, bacon, ham and bratwurst, chicken, and holiday turkeys, along with meat bundles, pet products and gift boxes. The beef and turkeys are sold as organic, and the farm says it uses no synthetic chemicals on its land or animals. It is a shop rather than a café, so plan to grill back at your cabin or campsite. Waseda also has stores in Sturgeon Bay and De Pere.
Island Lavender's fields on Highway 57 between Baileys Harbor and Sister Bay are about 15 minutes away, which makes the market an easy stop on a north-peninsula loop.
