About Hinterland Wine Company

Hinterland Wine Company on Closson Road in Hillier specializes in sparkling wine. It works in three methods side by side: bottle-fermented traditional-method wines such as Les Etoiles and a Blanc de Blancs, the tank-fermented Charmat-method Whitecap, and an Ancestral Rosé made in the older single-fermentation style.

That range makes a tasting here a useful lesson in how bubbles are made, from the tank-fermented Whitecap to the bottle-fermented Les Etoiles, which is also released as a recently disgorged older vintage. The tasting room serves flights from a posted menu, and groups of seven or more have a separate group tasting option. Small 250 mL bottles of Whitecap, Borealis and a cherry cider are also sold.

In fall 2026 the tasting room is open daily from 11 am to 5 pm, and until 6 pm on Fridays and Saturdays, including Thanksgiving Monday. Bottles can be bought at the winery, ordered for curbside pickup, or found at farmers' markets; three of the most popular wines are also sold in Ontario's provincial liquor stores.

Prince Edward County Lavender is a few minutes away in Hillier. In July, pair a walk through the lavender with a sparkling flight here.
